Under this premise, the National Chamber of the Restaurant and Seasoned Food Industry CANIRAC Jalisco will host the Gastronomic Industry Summit and the 2026 Restaurateur Merit Award. This event aims to strengthen the sector’s competitiveness, foster business alliances, and recognize those who have contributed to the development of Jaliscan gastronomy.

The event will be held on November 12th and 13th at the Conjunto Santander de Artes Escénicas in Guadalajara, under the theme “The Flavor of Experience.” It is expected to gather over 2,600 attendees, including business leaders, restaurateurs, chefs, sommeliers, suppliers, academics, investors, and industry specialists.

More than just a gastronomic congress, the Summit is poised to be a premier business platform for the food and beverage industry in Western Mexico, in a context where hospitality has become a strategic factor for attracting tourism, generating investment, and creating employment.

Currently, over 46,000 establishments dedicated to the preparation and sale of food and beverages operate in the state, with approximately 7,000 located in tourist-centric areas.

The sector generates an economic impact exceeding 20 billion pesos, equivalent to approximately 15% of the state’s tourism Gross Domestic Product (GDP), and creates over 156,000 direct formal jobs.

Another indicator reflecting the importance of gastronomy within tourism is that nearly three out of every ten pesos spent by visitors in Jalisco are allocated to dining at restaurants, markets, and culinary experiences, consolidating hospitality as a transversal activity for economic development.

Furthermore, the industry maintains significant female participation, with 44% of its workforce comprising women.
