With this vision, the Government of Jalisco, through the Ministry of Tourism, and the National Chamber of the Restaurant and Seasoned Food Industry (Canirac) Jalisco, presented the 2026 edition of La Sazón, an event aimed at strengthening the sector’s professionalization, boosting gastronomic tourism, and positioning the state as an international culinary benchmark.

The event will take place on October 13 and 14 at the Centro Cultural Universitario in Guadalajara and will feature an additional highlight: it will host the National Assembly of Canirac, bringing together business leaders, restaurateurs, chefs, academics, and specialists from across the country.

The official explained that the six-year tourism plan includes more intensive promotion of the state’s flavors, ingredients, and culinary traditions as a tool to increase visitor arrivals and strengthen economic impact. These figures consolidate gastronomy as one of the activities with the greatest capacity to generate employment, attract visitors, and strengthen value chains linked to agriculture, commerce, the food industry, and services.

”La Sazón 2026” to Focus on Sector Professionalization

The program includes an agenda focused on the business development of the restaurant industry. Over the two days of the event, attendees will participate in:

Among the participants is Mauricio Silva, Director of the International Gastronomic College, along with national and international specialists focusing on innovation, gastronomic business management, hospitality, and market trends.
